For a few days, you stop being a tourist. You become a picker on a working coffee farm — out before sunrise with a basket on your hip, learning the cherries that go into your morning cup, by the hands of the family that grows them.

What this is

Not a farm tour.
An apprenticeship.

You'll live on the Finca La Niebla — a small family coffee farm in the cloud-forest hills above Boquete, where the volcano warms the soil and the mist comes up from the river every afternoon. There are no scripted tours, no visitor center, no gift shop.

Each morning you're in the rows by 6, basket on your hip, learning to pick only the ripe red cherries and leave the rest. By midday you're at the depulper. In the afternoon you're turning beans on the drying patio. In the evening you're at the cupping table, learning to taste what you spent the day making. By the end of your stay, you've followed a single batch from tree to cup.

This is for someone who already loves coffee and wants to understand it from the soil up. It's also for someone who has never thought about it. Doña Esperanza teaches both, slowly, the way her father taught her.

Picking with the family. You learn to read the cherries — only the deep red ones, never the green or yellow. Baskets fill slow at first. You get faster.

The wet mill

Weighing the day's pick, depulping, sorting floaters from sinkers. The fermentation tanks come alive.

Lunch with the family

Sancocho, patacones, the bread Doña Esperanza baked at four in the morning. Long, slow, around the long table.

The drying patio

Turning beans by hand or by rake every hour. Watching the sky for rain. Cupping yesterday's roast at the lab table.

Cena around the fire

Family, neighboring pickers, sometimes a roaster from town. Sweet bread, fresh coffee, the volcano dark behind the farm.

Your host

Doña Esperanza

Doña Esperanza grew up on this farm. Her father planted the first coffee trees here in 1962, and she's worked these rows for over thirty years. The family produces a small lot of washed catuaí and a few hundred pounds of geisha each season — most of it goes to one roaster in Portland.

She has welcomed apprentices to the farm since 2019. Many come back. A few have stayed through a whole harvest.

Questions

Before you book

Do I need to know anything about coffee?

No. About half of apprentices arrive without much context. Doña Esperanza teaches from the seedling up. The other half are coffee lovers — home roasters, baristas, café owners — who want to understand the farm side of the bean.

Do I need to speak Spanish?

No. Doña Esperanza's daughter Carolina speaks fluent English and is on the farm most days. Some Spanish helps at the long table — but most learning happens in the rows, where the cherries do the talking.

Is the work physical?

Picking is real work — you're on a hillside, with a basket, for several hours a day. You can step out at any time and shift to the wet mill, the drying patio, or the cupping bench. Tell us about any limitations and we'll plan around them.

Can I bring a partner who isn't picking?

Yes. Non-picking partners are welcome at meals and rest-day outings. There's a $790 stay-and-eat add-on for 7-day bookings.

How do I get there?

Fly into David (DAV), the regional airport in western Panama. Airport transfer to Boquete is included (about 45 minutes). Panama City (PTY) works too — short connecting flight or a 7-hour bus to David.

Cancellation policy?

Full refund up to 60 days before. 50% refund 30–60 days before. Within 30 days the booking is non-refundable, but we'll work with you to reschedule into the same harvest season.
